- 1 1/2 lb. firm fleshed fillets
- 1/4 c. flour
- 3 Tbsp. butter
- 3 Tbsp. cooking oil
- 1 Tbsp. blackened fish seasoning
- parsley sprigs
Directions

1Dust the fillets with flour.

2Heat the butter and oil in large, heavy pan over medium heat.

3Add fillets and cook 3 minutes on one side; turn and sprinkle seasonings evenly over the browned side.

4Cook another 3 minutes and turn, sprinkling this side with seasonings.

5Turn the heat on high and sear each side for about 2 minutes.

6Garnish with parsley and serve immediately.
