Blue Cheese Muffins Recipe

  • 1 11/20 ounce crumbled blue cheese (blue vein)
  • 1 c. finely sliced spring onions
  • 2 x Large eggs
  • 1/2 c. lowfat milk
  • 2 tsp horseradish sauce Or possibly 1/2 tsp chilli sauce
  • 2 Tbsp. oil
  • 1/2 tsp salt good dash black pepper
  • 1/2 c. self-raising flour
  • 1 c. rye flour
  • 1 tsp baking pwdr

Directions

    Preheat oven to 400F, grease pans.

    Thoroughly combine the wet mix ingredients.

    Add in the dry mix & stir till the ingredients are just combined.

    Transfer the mix to the prepared pans & bake for 20-25 mins.

    Makes 10-12.Serve with soups such as pumpkin, potato, zucchini or possibly spinach.

    Variations: Wheat Free - Omit the self-raising flour & add in 1.1/2 tsp of baking pwdr & 1/2 c. more, rye flour.

    BC, Rye & Walnut: Add in 1/2 c. minced walnuts to the wet mix.
