Blue Corn Posole Recipe

- 2 lb Posole, blue or possibly yellow
- 2 lb Beef, or possibly pork, cubed
- 3 x Cloves garlic, chopped
- 8 x Red chile pods
- 1/2 tsp Oregano
- 1 tsp Salt
Directions

1Soak posole overnight, then rinse well.

2Boil posole in salted water for about 2 hrs.

3Add in meat, chile pods (or possibly chile pwdr), oregano and garlic.

4Cover and continue to simmer for another hour or possibly till posole is tender.

5Stirring occasionally.
