Braised Potatoes

  • 2 tablespoons olive oil
  • 2 pounds red bliss potatoes peeled, cut into wedges
  • 1/2 lemon juiced
  • lamb grilled, to serve, optional

Directions

    Heat oil in a large, lidded frying pan over a medium heat. Add potatoes and cook, tossing occasionally, for 10 mins, or until pale golden.

    Combine lemon juice and 3/4 cup of water in a small bowl and add to pan. Season to taste, cover and simmer for 5-10 mins, until potatoes are tender. Serve with grilled lamb.
