Ingredients

  • 1/2 loaf day old bread
  • 2 eggs
  • 1 c. low-fat milk
  • 2 large dead ripe tomatoes
  • 1/2 c. chopped fresh cilantro
  • 2 Tbsp. grated Parmesan cheese
  • 1/2 tsp. freshly ground pepper

Directions

    Cut the bread into thick slices, then arrange on a 7 x 10 ovenproof glass baking pan.

    Preheat oven to 350°.

    Whisk together the eggs and milk and season with the pepper.

    Arrange tomato slices over the bread.

    Pour egg and milk mixture over all. Sprinkle with the cilantro and top with cheese.

    Bake for 15 minutes or until custard sets.

    Serve in squares.
