- 1 lb. hot sausage
- 1 (2 lb.) bag frozen hash brown potatoes
- 1 chopped green bell pepper
- 1 chopped red bell pepper
- 1 chopped onion
- 3 celery ribs, finely chopped
- 6 eggs, beaten
- 1 lb. Cheddar cheese, grated
- flour tortillas
- picante sauce
Directions

1Brown sausage in frying pan; drain.

2Add hash browns, peppers, onion, celery and eggs.

3Mix butter in a large (13 x 9 x 2-inch or larger) casserole or spray with nonstick spray.

4Place taco mixture in casserole and bake at 350° for 45 minutes.

5Top with cheese and heat until melted.

6To serve, place a large scoop of potato mixture on a warmed tortilla; add picante sauce, if desired; roll up and enjoy.
