  • 1 lb. hot sausage
  • 1 (2 lb.) bag frozen hash brown potatoes
  • 1 chopped green bell pepper
  • 1 chopped red bell pepper
  • 1 chopped onion
  • 3 celery ribs, finely chopped
  • 6 eggs, beaten
  • 1 lb. Cheddar cheese, grated
  • flour tortillas
  • picante sauce

Directions

    Brown sausage in frying pan; drain.

    Add hash browns, peppers, onion, celery and eggs.

    Mix butter in a large (13 x 9 x 2-inch or larger) casserole or spray with nonstick spray.

    Place taco mixture in casserole and bake at 350° for 45 minutes.

    Top with cheese and heat until melted.

    To serve, place a large scoop of potato mixture on a warmed tortilla; add picante sauce, if desired; roll up and enjoy.
