- 2 lb. broccoli florets
- 1 clove garlic
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 c. light cream
- 4 eggs, separated
- salt and pepper to taste
Directions

1Cook broccoli in boiling water with garlic until tender. Remove garlic; drain.

2Melt butter; add flour and gradually pour in the cream.

3Cook until thick; add beaten egg yolks and broccoli.

4Fold in stiffly beaten egg whites.

5Season.

6Pour into buttered and floured ring.

7Place in pan of boiling water and bake in a 325° oven for 30 minutes.
