Broccoli Soup

  • fresh broccoli, steamed and chopped or 10 oz. pkg. frozen chopped broccoli, slightly thawed
  • 1/2 stick butter
  • 1 onion, chopped
  • 3 cans chicken broth
  • 1 qt. half and half
  • 3 Tbsp. flour
  • salt and pepper to taste

Directions

    Melt butter in large saucepan and saute onion until clear. Add chicken broth.

    Mix flour with 1/2 cup half and half.

    Add slowly to broth mixture.

    Cook until desired thickness.

    Add broccoli and remaining half and half and heat through.

    Salt and pepper to taste.
