  • 2 1/2 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 c. sugar
  • 1 envelope yeast
  • 1 c. low-fat buttermilk, warmed
  • 1/4 c. acceptable vegetable flour

Directions

    Mix dry ingredients together in a large bowl; set aside. Dissolve yeast in slightly warmed buttermilk.

    Add buttermilk mixture and oil to flour mixture.

    Stir gently and quickly until mixed.

    Turn dough onto a lightly floured board and knead gently 20 to 30 times.

    Roll out or pat to a 1/4-inch thickness.

    With a floured 1-inch biscuit cutter, make 60 biscuits, then brush each biscuit with oil.

    Place 30 biscuits on an ungreased baking sheet. Place another biscuit on top of each.

    Cover and let rise in a warm place (about 85°) for about 2 hours.

    Preheat oven to 375°.
