- 2 cups calamari, sliced into rings (use tubes and tentacles)
- 2 cups buttermilk
- 2 cups all-purpose flour
- salt and pepper
- oil, for frying
- 2 tablespoons whole butter
- 34 cup sliced mild banana pepper
- 34 cup large diced tomato
- 1 tablespoon fresh lemon juice
- 14 cup chopped scallion
Directions

1Clean and soak calamari in buttermilk for 2 hours before cooking.

2Drain well.

3Season flour with salt and pepper.

4Dredge calamari with flour until each ring separates easily from others.

5Put in sifter and shake off excess flour.

6Heat oil and fry calamari until golden brown.

7DO NOT OVERCOOK!

8Start with 1 tablespoon butter over medium heat.

9When butter is melted, add peppers and tomatoes.

10Deglaze with lemon juice.

11Add remaining butter and scallions.

12Toss.

13Add calamari and toss.

14Serve.
