  • 1 gal. wilted poke
  • 1/2 c. vinegar
  • 2 Tbsp. salt
  • 3 Tbsp. sugar

Directions

    Wash tender poke.

    Add to boiling water.

    Boil until wilted. Drain poke.

    Add vinegar, salt and sugar.

    Cook until done or soft. Put in jars and seal.
