- 3 eggs
- 3/4 c. vegetable oil
- 3/4 c. buttermilk
- 2 c. sugar
- 2 tsp. vanilla
- 8 oz. crushed pineapple
- 2 c. shredded carrots
- 1/4 c. flaked coconut
- 1 c. walnuts, chopped
- 2 tsp. soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 c. flour
Directions

1Combine eggs, oil, buttermilk, sugar and vanilla and beat well with mixer.

2Add pineapple, carrots, coconut, walnuts, soda, salt and cinnamon and mix well.

3Add flour and mix well.

4Pour into greased and floured 9 x 13-inch pan.

5Bake at 350° for 35 to 40 minutes.

6Turn out immediately onto cooling rack.

7Frost with Cream Cheese Frosting when completely cooled.
