- 2 c. sugar
- 4 eggs
- 1 1/2 c. salad oil
- 1 tsp. vanilla
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 c. flour
- 3 c. grated carrots
- 3/4 c. ground walnuts
- 1 (8 oz.) cream cheese, softened
- 1 stick butter
- 1 lb. confectioners sugar
Directions

1Beat together sugar, eggs, oil and vanilla.

2Mix together salt, cinnamon, baking soda, baking powder and flour, then add to first mixture.

3Then add carrots and walnuts; mix well.

4Bake in a 9 x 13 x 2-inch pan at 350° for 35 to 40 minutes or until done.
