Carrot Pineapple Cake

- 3 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 2 c. sugar
- 1 1/2 c. oil
- 3 eggs
- 2 tsp. vanilla
- 1 c. chopped nuts (optional)
- 2 c. grated carrots
- 1/2 c. crushed pineapple
Directions

1Combine sugar, oil and eggs.

2Beat to blend.

3Add vanilla and blend in.

4Add dry ingredients and blend in, but do not overmix. Lastly, fold in pineapple, carrots and nuts.

5Turn batter into a 10-inch tube pan or Bundt pan.

6Bake in a 325° oven for 1 hour and 20 minutes or until done.

7Cool in pan for 10 minutes before turning out to cool on rack.
