- 4 Tbsp. butter
- 2 Tbsp. cognac or brandy
- 1/4 c. minced cilantro or parsley
- salt and pepper
Directions

1In a wide frying pan, lay carrots flat and add water to cover. Bring to a boil over high heat and then reduce heat to simmer and cover.

2Cook until carrots are tender when pierced, about 15 to 20 minutes.

3Drain.
