Catfish Stew

Ingredients

  • 1 lb. catfish (meat off bone)
  • 2 cans tomatoes
  • 1 medium onion, chopped fine
  • 5 to 6 potatoes, cubed (medium to small)
  • 5 to 6 slices bacon
  • Tabasco sauce
  • salt and pepper

Directions

    Fry bacon; crumble.

    Saute onion in bacon grease and drain well.

    Boil catfish 10 to 15 minutes or until meat falls off the bone.

    Remove bones and skin.

    Add potatoes, tomatoes, onion and bacon in with meat.

    Season to taste with Tabasco sauce, salt and pepper.

    The more Tabasco sauce the better!

    Let simmer 30 minutes.
