Celebration Rice

- 3/4 c. margarine or butter
- 1 c. sliced green onion
- 1 c. shredded carrots
- 2 1/2 c. uncooked converted long grain rice
- 5 tsp. instant chicken bouillon
- 1/4 tsp. dried thyme leaves
- 4 1/2 c. water
- 1/2 c. chopped parsley
Directions

1Melt margarine in 4-quart Dutch oven. Saute green onion and carrots in melted margarine.

2Add rice. Cook, stirring occasionally, until rice is opaque.

3Add bouillon, thyme and water. Cook over high heat until mixture comes to a boil.

4Cover, reduce heat and simmer 15 to 20 minutes or until liquid is absorbed.

5Stir in parsley. Serve.

6Serves 12.
