- 1 cup long-grain rice
- 2 cups water
- 1 teaspoon salt
- 1 teaspoon butter
- 1 teaspoon vinegar
- 14 cup butter
- 1 12 cups thinly-sliced carrots
- 2 cups chopped onions
- 1 cup cashew nuts
- 1 (10 ounce) package frozen peas (thawed)
Directions

1In a large saucepan, combine rice, water, salt, 1 teaspoon butter, and vinegar.

2Cook according to directions on rice package.

4Over medium-high heat, melt 1/4 cup butter in a large skillet.

5Add carrots, onions, cashews, and peas.

6Cover and cook 5 minutes.
