Ingredients

  • 8 oz bacon
  • 1/4 cup olive oil
  • 6 cup yellow onion
  • 4 tbsp unsalted butter
  • 1/2 cup flour
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 tsp ground tumeric
  • 12 cup chicken stock
  • 6 each diced potatoes
  • 3 lb frozen corn
  • 2 cup half and half
  • 1/2 lb sharp white cheddar gratrd

Directions

    cook bacon and olive oil in large stock pot until bacon is crisp

    remove bacon and add onions and butter to fat until onions are translucent
  3. 3
    stir in flour, salt, pepper and turmeric cook for 3 minutes

    add chicken stock and potatoes and boil for 15 minutes

    add corn, half and half and cheddar and cook till cheese is melted.

    garnish with bacon
