  • 4 c. rapidly boiling water, seasoned with a heaping tsp. salt
  • 1 small chopped onion
  • 1 c. grits (preferably coarse ground grits)
  • 1 stick butter
  • 2 cloves fresh ground garlic
  • 1/2 lb. sharp, yellow cheese
  • 4 well beaten eggs
  • milk

Directions

    In boiling water, add onion and grits.

    Cook for 30 minutes. In a separate pan, melt together butter, garlic and cheese.

    eggs and enough milk to make one cup of liquid.

    Stir the liquid briskly into the grits; pour the grits into a buttered casserole dish and bake for 30 minutes or so at 350°.
