Cheese Grits Casserole

Ingredients

  • 1 1/2 c. hominy grits (do not use quick cooking)
  • 6 c. boiling water
  • 1 1/2 tsp. salt
  • 6 oz. sharp Cheddar cheese, thinly sliced
  • 3/4 c. milk
  • 3/4 c. buttered bread crumbs
  • 1/2 tsp. paprika
  • 2 eggs, lightly beaten

Directions

    In heavy saucepan, stir grits slowly into boiling water.

    Cook 5 minutes, stirring occasionally.

    Allow grits to cool.

    Mix well with beaten eggs.

    In greased 1 1/2-quart baking dish, alternate layers of grits and cheese.

    Pour milk over top.

    Sprinkle with bread crumbs and paprika.

    Bake in preheated oven at 325° for about 30 minutes.
