- 1 medium onion, chopped (1/2 c.)
- cooking oil
- 1 (16 oz.) can tomatoes, cut up
- 1 (4 oz.) can green chili peppers, rinsed, seeded and chopped
- 1 tsp. dried oregano, crushed
- 12 (6-inch) tortillas
- 8 oz. Monterey Jack or Longhorn cheese
- 1 c. dairy sour cream
Directions

1Cook onion in 2 tablespoons of oil until tender but not brown. Stir in undrained tomatoes, chili peppers and oregano.

2Simmer about 20 minutes until very thick.

3In skillet, dip tortillas in 2 tablespoons of hot oil about 10 seconds or just until limp.

4Drain on paper towel.

5Cut cheese in about 12 strips.

6Place 1 strip of cheese and 2 tablespoons of sauce down center of each tortilla; overlap edges.

7Arrange on baking sheet seam side up.

8Bake, covered, in a 350° oven for 8 minutes.

9Uncover; bake 3 to 4 minutes more.

10Open tortillas and add sour cream.

11Roll up. Serves 6.
