Cheese Yorkshire Pudding

  • 2 eggs
  • 1 c. milk
  • 3 Tbsp. bacon or roast drippings
  • 1 c. flour
  • 1/2 tsp. salt
  • 1 c. finely grated Gruyere cheese

Directions

    Beat the eggs in a medium mixing bowl until very thick and lemon colored.

    Add the milk gradually, then add the bacon drippings and blend thoroughly.

    Add the flour and salt gradually and beat until smooth.

    Fold in half the cheese.

    Pour into a well-greased 1-quart baking dish.

    Then sprinkle the remaining cheese over top.

    Bake in a preheated 450° oven for 25 minutes or until golden brown.
