- 400 g butter
- 400 g caster sugar
- 1 tsp vanilla extract
- 2 None lemons, grated zest
- 8 None eggs
- 500 g plain flour
- 6 1/2 tsp baking powder
- 4 tbsp cherry jam
- 800 g cherries, stoned
- None None Icing sugar, for dusting

1Preheat the oven to 325°F. Grease a 12 x 15 inch cake pan and sprinkle with flour. Beat the butter, sugar, vanilla extract and a pinch of salt until creamy. Beat in the lemon zest, then beat in the eggs one at a time. Mix the flour and baking powder together and stir in.

2Spoon half the batter into the pan and smooth out. Drizzle with the jam. Spoon in the remaining batter and smooth out. Sprinkle with half the cherries. Bake for 20 mins. Remove from the oven, sprinkle with the remaining cherries and bake for another 15 mins, or until a skewer comes out clean. Allow to cool.

3Cut into 24 squares and dust with powdered sugar.
