  • 3 egg whites
  • 1 tsp. vanilla
  • dash of salt
  • 1 c. sugar
  • 3/4 c. broken walnuts
  • 1/2 c. saltine crackers
  • 1 tsp. baking powder
  • 1 can (1 lb. 4 oz.) cherry pie filling
  • 3 Tbsp. rum or orange flavored liqueur
  • 1 c. whipping cream

    Beat egg whites with vanilla and salt until foamy.

    Gradually beat in sugar, beating to stiff peaks.

    Combine nuts, cracker crumbs and baking powder, folding into the beaten whites.

    Spread mixture in well-greased 9-inch pie plate, building up sides.

    Bake at 300° for 40 minutes or until the meringue shell is dry on the outside.
