- 6 to 8 pieces chicken, thawed and skinned
- 1 c. rice, uncooked
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can chicken soup
- 1 1/2 cans water
- salt and pepper, etc.
- a few vegetables as desired such as: 1 c. carrot rounds, a few green beans or whatever you wish for added color and nutrition
Directions

1Butter a 9 x 13-inch baking dish and distribute the rice evenly over the bottom.

2Sprinkle salt and pepper and vegetable pieces as desired.

3Lay on the chicken.

4Mix soup and water together.

5Pour over ingredients in dish.

6Cover with foil.

7Bake at 350° until chicken is tender, about 1 1/2 hours.

8About halfway through the cooking, remove from oven and turn the chicken.

9About 15 minutes before end of baking, remove foil for browning.
