Chicken Cantalone

  • 4 halves chicken breasts, skinned, boned and flattened between 2 pieces of wax paper
  • 8 oz. Mozzarella cheese
  • 3 ripe tomatoes, sliced
  • 1 c. mushrooms
  • 1 bunch scallions, cut into 1/2-inch pieces

Directions

    On each piece of chicken, spread pepper, Italian seasoning and Dijon mustard.

    Top each piece of chicken with a slice of cheese; roll up, secure with toothpick and then flour.

    Saute in olive oil or butter over medium heat.

    Cover with vegetables and cook slowly until tender.
