- 4 halves chicken breasts, skinned, boned and flattened between 2 pieces of wax paper
- 8 oz. Mozzarella cheese
- 3 ripe tomatoes, sliced
- 1 c. mushrooms
- 1 bunch scallions, cut into 1/2-inch pieces
Directions

1On each piece of chicken, spread pepper, Italian seasoning and Dijon mustard.

2Top each piece of chicken with a slice of cheese; roll up, secure with toothpick and then flour.

3Saute in olive oil or butter over medium heat.

4Cover with vegetables and cook slowly until tender.
