Ingredients
- 3 whole chicken breasts, cooked and skinned
- 1 (15 1/4 oz.) can pineapple chunks in unsweetened juice
- 1 medium, unpeeled apple
- 1 c. seedless grapes, halved
- 1/4 c. lo-cal salad dressing or mayonnaise
- 1 1/2 c. light whipped topping
- lettuce leaves
- pecans or walnuts (optional)
Directions

1Place chicken in water and cook until done (15 or 20 minutes). Drain and remove from bone.

2Coarsely chop and set aside.

3Drain pineapple and reserve juice.

4Coarsely chop apple; dip in pineapple juice to prevent browning.

5Combine chicken, pineapple, apple, grapes, salad dressing and whipped topping.

6Chill 2 hours and serve on lettuce.
