Chicken In Peanut Sauce

  • 1 lb. chicken breast halves, skinned and boned
  • 4 oz. vermicelli noodles
  • 1/4 c. smooth peanut butter
  • 3 Tbsp. soy sauce (preferably low sodium)
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. plus 1 tsp. Oriental sesame oil
  • 1 clove garlic, crushed
  • 1/4 tsp. hot red pepper, crushed
  • 3 Tbsp. water
  • 1/4 c. julienned red bell pepper
  • 1/4 c. julienned cucumber
  • 2 c. shredded iceberg lettuce

    In a 3-quart saucepan over high heat, bring 2 quarts water to boil.

    Add chicken breast halves and reduce heat to low.

    Cook 10 to 15 minutes until chicken is cooked through.

    Using a slotted spoon, remove chicken to plate.

    Return water to boil; add vermicelli and cook 5 to 7 minutes until just tender.
