Ingredients

  • 4 lb. hen or 2 fryers
  • 4 Tbsp. butter
  • 1/2 c. chopped celery
  • 3/4 c. chopped onions
  • 1/8 c. chopped green pepper
  • 1/4 c. flour
  • 1/8 c. cold water
  • 1 c. boiling chicken broth
  • 1/2 small jar pimentos, chipped
  • 1 can mushroom soup (undiluted)
  • salt and pepper
  • little red pepper
  • 2 eggs, slightly beaten
  • 25 or 30 Ritz crackers

Directions

    Mix flour in about 1/8 cup cold water and add to chicken broth.

    Cool a minute or so to thicken.

    Add chicken, pimentos, mushroom soup, salt, pepper and red pepper, all to taste.

    Add eggs.

    Crush crackers and add to mixture.

    Add sauteed vegetables. Mix well.

    Pour into 2-quart baking dish.

    Put crumbled crackers (about 15) on top.

    Bake at 325° or 350° for 45 minutes.

    Make gravy with 3 cups of broth.
