  • 4 chicken legs or thighs
  • 1 tbsp herbes de provence
  • 2 tsp onion powder
  • 1 head garlic; peeled
  • 1 cup EVOO
  • 1 kosher salt and peppercorn melange

    Combine oil and garlic in a small saucepan.

    Steep oil very slowly.

    Bring up to no higher than 160.

    Cook for approximately one hour or until garlic is caramelized.

    Store in a jar for a few weeks.

    Allow oil to cool down to room temperature.

    Marinate chicken in enough garlic oil to cover and dried spices except salt for up to 48 hours.

    Bake at 350 for approximately 50 minutes or until thermometer reaches 165.
