- 4 chicken legs or thighs
- 1 tbsp herbes de provence
- 2 tsp onion powder
- 1 head garlic; peeled
- 1 cup EVOO
- 1 kosher salt and peppercorn melange
Directions

1Combine oil and garlic in a small saucepan.

2Steep oil very slowly.

3Bring up to no higher than 160.

4Cook for approximately one hour or until garlic is caramelized.

5Store in a jar for a few weeks.

7Allow oil to cool down to room temperature.

8Marinate chicken in enough garlic oil to cover and dried spices except salt for up to 48 hours.

9Bake at 350 for approximately 50 minutes or until thermometer reaches 165.
