Chicken Salad Stuffed Shells

  • 32 Ronzoni jumbo shells
  • 1/2 c. plain yogurt
  • 1/3 c. mayonnaise
  • 2 Tbsp. lemon juice
  • 1 Tbsp. curry powder
  • 1 tsp. prepared mustard
  • 2 garlic cloves, pressed
  • 2 c. cooked chicken in strips
  • 1 1/2 c. red pepper, chopped
  • 1 c. celery, chopped
  • 1/2 c. sliced scallions
  • 1/2 c. sunflower seed (unsalted)

Directions

    Cook pasta as directed; drain.

    Combine curry, yogurt, mayonnaise, lemon juice, mustard and garlic.

    Add chicken, red pepper, celery, scallions and sunflower seed.

    Toss lightly. Spoon 1 1/2 tablespoons into each shell.

    Chill.
