Ingredients

  • 2 whole + 1/2 chicken breast (boneless)
  • 2 or 3 Tbsp. olive oil or safflower oil
  • 1 medium onion, chopped
  • 2 buds garlic, chopped
  • 6 or 7 mushrooms, cut coarsely
  • 1 tsp. oregano
  • 1 tsp. Italian seasoning
  • 1 tsp. celery seed
  • 1/8 tsp. crushed red pepper (optional))
  • 1 large can tomatoes
  • 1 small can tomato sauce
  • Parmesan cheese (optional)

Directions

    Trim fat from chicken and cut into bite size pieces.

    Brown in oil along with garlic buds, onion, mushrooms and spices.

    Add tomatoes and tomato sauce.

    Simmer until cooked thoroughly.

    Cook spaghetti, according to directions.

    Add sauce.

    (I freeze leftovers in small individual servings.)

    When frozen, defrost in microwave and warm.
