- 1 pork roast (boneless) or pork steaks (5 to 6), cut up
- 1 onion, chopped
- 1 clove garlic, chopped or minced
- 7 Anaheim chiles
- 1 c. tomatoes, chopped
- salt and pepper to taste
- 3 Tbsp. cooking oil
Directions

1Brown meat, onion and spices together in a large skillet or saucepan. Leave meat drippings in pan, then sprinkle 1/2 cup flour over top of meat and mix together. Add enough water to make gravy. Add chiles and tomatoes, if used.

2Let simmer for 1 hour, stirring occasionally.

3If gravy is too thick, add water.

4If too thin, make a flour or cornstarch paste and add to gravy.
