- 6 long green chilies
- 1 lb. cheese, in strips
- flour
- 3 eggs, separated
- 1/2 tsp. salt
Directions

1Place chilies under broiler.

2Roast until blistered, remove and place in damp cloth.

3Peel and remove seeds and veins from chilies. Fill chilies with cheese strips; roll in flour.

4Beat egg whites with salt until stiff.

5Fold in beaten egg yolks.

6Dip floured chilies in egg mixture.

7Fry in deep hot fat until golden brown.
