  • 3 lbs tomatoes
  • 1/2 pound onions
  • 2 cloves garlic
  • 2 oz chipotley peppers in adobo sauce
  • 1 cup water
  • salt and pepper to taste

Directions

    Place tomatoes on baking sheet and roast in oven 30 minutes or until lightly darkened. Cut onions into medium dice and roast in oven for 20 minutes; roast garlic in oven for 10 minutes.

    Puree tomatoes, onions, garlic, peppers and wter to a chunky consistency. Season with salt and pepper to taste.
