  • 2 c. mochiko flour
  • 1 3/4 c. sugar
  • 3 1/2 Tbsp. ground cocoa
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 (12 oz.) can evaporated milk
  • 1 (12 oz.) can frozen coconut milk, thawed
  • 1/4 c. butter or margarine, melted
  • 2 eggs

Directions

    Preheat oven to 350°.

    Grease a 9 x 13 x 2-inch pan.

    In a large bowl, combine all ingredients and mix well with an electric mixer.

    Pour into prepared pans.

    Bake 1 hour.

    Cool before cutting.

    For easy cutting, grease knife with vegetable oil or butter.
