Chocolate Pudding Recipe

  • 2 squares chocolate
  • healthy pinch of baking soda
  • 2 Large eggs, separated
  • 1/2 c. sugar
  • 1 Tablespoons butter
  • 2 c. lowfat milk
  • 1 tsp vanilla

Directions

    Separate the Large eggs.

    Heat chocolate in a little water with a healthy pinch of soda in a double boiler.

    Reduce heat.

    Beat the egg yolks.

    Stir a spoon of the chocolate into the beaten Large eggs.

    Add in the egg mix slowly into the chocolate, stirring briskly.

    Add in most of the the sugar gradually (reserve a Tablespoons for the egg whites) and continue stirring constantly till the mix thickens.

    Remove from heat.

    Beat the egg whites with 1 Tablespoons sugar and the vanilla till stiff.

    Fold into the pudding mix while still warm.

    Refrigerateseveral hrs before serving.
