Ingredients

  • 1 gal. cabbage, chopped
  • 12 large onions, chopped
  • 12 green peppers, chopped
  • 12 red peppers, chopped
  • 1/2 gal. green tomatoes, chopped
  • 1/2 c. salt
  • hot red pepper (optional)
  • 2 qt. vinegar
  • 5 c. sugar
  • 6 Tbsp. mustard seed
  • 1 Tbsp. turmeric powder
  • 1 Tbsp. ginger
  • 2 Tbsp. mixed spices

Directions

    Put the last 4 ingredients in a bag and tie.

    Combine sugar, vinegar and spices tied in a bag.

    Bring to a boil; simmer 5 minutes.

    Add vegetables.

    Bring back to a boil.

    Remove spice bag.

    Pack chow chow in hot jars.

    Seal at once.
