Ingredients

  • 1 (12 1/2 lb.) peck green tomatoes
  • 8 large onions
  • 10 green bell peppers
  • 3 Tbsp. salt
  • 6 pods hot peppers
  • 1 qt. vinegar
  • 1 Tbsp. cinnamon
  • 1 Tbsp. allspice
  • 1/4 tsp. cloves
  • 3 Tbsp. dry mustard
  • few bay leaves
  • 1 3/4 c. sugar

Directions

    Chop tomatoes, onions and peppers together; cover with salt. Let stand overnight.

    Drain; add the hot peppers which have been chopped and the vinegar and spices (spices tied in cheesecloth bag) and sugar.

    Allow to boil slowly until tender, about 15 minutes.

    Pack tightly into hot sterilized jars and seal at once. Or bring ingredients to a boil and pack in jars, screwing bands tightly.

    Process in hot water bath at simmering temperature (180°) for 15 minutes.
