- 3 lbs chicken, cut up
- 1 tablespoon cinnamon
- 2 tablespoons sugar
- 1 teaspoon fresh ground pepper
- 34 teaspoon dried oregano
- 1 12 teaspoons salt
- 1 12 cups flour
- vegetable oil
Directions

1Place chicken pieces in a baking dish.

2Mix cinnamon, sugar, pepper, oregano and salt in a small bowl.

3Sprinkle over chicken, coating both sides.

4Cover chicken and refrigerate at least 1 hour.

5Dredge chicken in flour, shake off excess.

6In a large saucepan, heat 2 inches of oil to 375.

7Fry chicken in batches, without crowding, turning, until browned on the outside and tender and cooked through.
