  • 3 lbs chicken, cut up
  • 1 tablespoon cinnamon
  • 2 tablespoons sugar
  • 1 teaspoon fresh ground pepper
  • 34 teaspoon dried oregano
  • 1 12 teaspoons salt
  • 1 12 cups flour
  • vegetable oil

Directions

    Place chicken pieces in a baking dish.

    Mix cinnamon, sugar, pepper, oregano and salt in a small bowl.

    Sprinkle over chicken, coating both sides.

    Cover chicken and refrigerate at least 1 hour.

    Dredge chicken in flour, shake off excess.

    In a large saucepan, heat 2 inches of oil to 375.

    Fry chicken in batches, without crowding, turning, until browned on the outside and tender and cooked through.
