  • 6 (6 oz.) cans chopped clams
  • 1 1/2 medium onions, diced
  • 3 to 4 stalks celery, diced
  • 9 medium potatoes, diced
  • 1 tsp. granulated garlic
  • 1 tsp. basil
  • 1 tsp. white pepper
  • 1 tsp. whole thyme
  • 1 tsp. oregano
  • 3/4 lb. bacon, diced
  • 1/2 bunch fresh parsley, minced
  • 2 gal. milk
  • 1 lb. butter
  • 1 lb. flour

    Combine onions, celery, basil, garlic and thyme in separate bowl; set aside.

    In 3-gallon saucepot, brown bacon, then add clams and juice.

    Simmer 20 minutes.

    Add onions, celery, basil, garlic, thyme, pepper and oregano.

    Simmer until celery is done.
