Cold Rice With Shrimp

- 1 c. raw rice
- 3 scallions
- 1 bunch chives
- 1/2 onion
- 1 1/2 c. cooked, cleaned shrimp (small to medium)
- 1 c. mayonnaise
- pinch of ginger
- salt and lemon juice to taste
- lettuce
- sesame seed, toasted
Directions

1Cook rice according to package directions and cool.

2Chop scallions, chives and onion fine.

3Add to the cold cooked rice. Add the shrimp and mayonnaise.

4Season to taste with the ginger, salt and lemon juice and refrigerate until serving time.

5Heap on lettuce and garnish with sesame seed.
