Ingredients
- 2 bunches collard greens (turnip/mustard greens)
- salt
- water
- 2 ham hocks or 1 c. ham chunks
- bacon drippings (add anytime you want)
Directions

1Wash greens thoroughly (2 to 3 times) to remove sand.

2Take out and discard tough stems.

3Put ham hocks or ham chunks in pot.

4Add greens and fill half full with water.

5Let greens come to a boil, then turn fire down and simmer 2 1/2 to 3 hours or until seasoned and tender.

6Add salt according to taste when serving.

7Lift greens out of water into a flat bowl and cut into bite size pieces with a sharp knife.

8We like to sprinkle pepper sauce or vinegar on our plates.
