  • 2 eggs, slightly beaten
  • 1 (8 1/2 oz.) Jiffy muffin mix
  • 1 (8 oz.) can corn
  • 1 (8 oz.) can creamed corn
  • 1 c. sour cream
  • 1/2 c. margarine or butter, melted
  • Swiss cheese (or any kind may be used)

Directions

    Mix first 6 ingredients and bake at 350° for 35 minutes.

    Do not cover.

    Add cheese and bake 10 to 15 minutes longer or until knife comes out clean.

    You can also saute chopped onions to put on top when you add cheese.
