- 2 eggs, slightly beaten
- 1 (17 oz.) can creamed corn
- 1/4 c. vegetable oil
- 2 c. Cheddar cheese
- 1 c. self-rising cornmeal
- 1 c. milk
- 1 lb. ground beef
- 1 large onion, chopped
- 2 to 4 jalapeno peppers, chopped or use 1/4 c. bell pepper
Directions

1Combine eggs, corn meal, corn, milk and oil in a bowl; set aside.

2Cook beef until browned; drain well and set aside.

3Pour 1/2 of corn meal mixture into a greased 1 1/2-inch cast-iron skillet.

4Spread evenly with beef.

5Top with cheese, onion and peppers.

6Pour on remaining batter.

7Bake at 350° for 40 to 45 minutes.
