  • 1 cup imitation crabmeat
  • 2 slices lowfat turkey ham, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon half salt, half salt substitute mixture
  • 3/4 cup long grain white rice, rinsed and drained
  • 1 cup tomato sauce
  • 1 cup hot water
  • 1 cup fat-free evaporated milk
  • 1 1/2 teaspoons coconut extract
  • 1 6-ounce jar red pimento, cut into strips, drained

Directions

    In a small bowl, soak crabmeat in water for at least 2 hours; drain and set aside.

    In a large skillet, over low heat, saute turkey ham with garlic, cilantro, and salt; stir constantly.

    Add crabmeat, rice, tomato sauce, water, milk, and coconut extract; mix well; simmer until rice is cooked (about 35 minutes).
