- 3 eggs
- 1 c. sugar
- 2 c. milk
- 1 1/2 tsp. cornstarch
- 1 tsp. vanilla
- 1/2 tsp. lemon flavoring
- 1/2 tsp. almond flavoring
- 1 to 1 1/2 c. cooked rice
- 1 c. raisins (optional)
- nutmeg
Directions

1Preheat oven to 325°.

2Beat eggs; add sugar and beat well. Add milk, cornstarch and flavorings.

3Mix well.

4Stir in rice, raisins and nutmeg to taste.

5Pour in 2-quart baking dish. Sprinkle with additional nutmeg.

6Set in pan of hot water.

7Bake for 2 hours, until knife inserted comes out clean.

8Stir several times while baking to prevent raisins and rice from settling to bottom.
