Creamy Rice Pudding

  • 1/2 c. uncooked raw rice
  • 3 c. boiling water
  • 1 1/2 tsp. salt
  • 1 can sweetened condensed milk
  • 1/2 c. raisins
  • 2 eggs
  • 1 tsp. vanilla
  • 1/4 tsp. nutmeg

Directions

    In heavy 2-quart pan, cook rice in water and salt 15 minutes. After it starts to boil, remove from heat and add milk and raisins.

    Gradually add beaten eggs, one at a time, stirring briskly while over low heat. Stir constantly until mixture coats a metal spoon.

    Remove from heat and add vanilla and nutmeg.
