- 2 lb. beef stew meat
- 1 lb. summer sausage
- 3 cans tomato sauce or tomatoes
- 2 qt. beef broth
- 4 cans red beans (not kidney beans)
- 4 small onions, chopped
- 1 large can tomato juice
- Adolph's tenderizer
- salt and pepper
- red pepper
- paprika
- chili powder
- garlic
- sugar
- Minute rice
- Cajun seasoning (optional)
Directions

1Cut stew meat small; cook in tap water with tenderizer for about 1 hour or until tender.

2Add sausage, beef broth, tomato sauce, chopped onions, tomato juice and red beans.

3Add seasoning and red pepper to taste.

4Continue to cook while adding ingredients.

5Add Minute rice slowly to reach desired thickness.
